Long Weekend Fun and our Mexican dinner - August 3 - 7th

Thursday's a beautiful day with no wind and a comfortable 25C. After morning chores, we spent the rest of the day swimming and relaxing down at the dock. The lake is still quiet before the long weekend. Apparently by mid-afternoon though, Highway 18 coming into Lake Cowichan became a slow go with all the people coming into camp at the SunFest that starts tomorrow. Good thing I went to the store early this morning and picked up the final ingredients for our Mexican Feast on Saturday.

Friday another lovely day down at the dock. Sandmark's next door brought their boat back from Renfrew with another load of salmon. Apparently their smoker will be fired up on Sunday. :) We lucked out with a couple of salmon steaks for our dinner.



Saturday, the kids and Amelia arrived shortly after 9 am. Let the fun begin. Elvira came just after 10 am and the cooking began for our Mexican Feast. She cooked up the chicken mole and stuffing for the Chile Rellanos the day before at home, but it still took us all day to make the refried beans, mexican rice, mexican corn salad, pico de gallo and roasting, cleaning and stuffing the poblano peppers (thanks Kristi) and making the red sauce for them. It's definitely time consuming cooking mexican food. 

We'd also invited June and Roy from next door for dinner too as we were going to have mega food. Originally my cousin and his wife were supposed to come this weekend when I'd arranged for Elvira to cook for us, but with my aunt in hospital they were unable to come.

Here is my tomato and pepper harvest to use with our feast. Thanks Ray, Kristi and Amelia for picking it.

Amazing with 3 cherry tomato plants and 2 pepper plants on my deck they have been producing fruit since mid June.

After Amelia's nap they took her to the park next door for a walk.

While everyone was helping clean up dishes from dinner, I took Amelia downstairs for her bath.


The next two days we kept Amelia busy with swimming, going to the park and playing bean bag.







Kristi took her for a swim every day she was here. Our lake baby loves the water. Amelia will actually jump off the dock with a little help from Papa into the water with momma.

After Amelia's nap, snack and more bean bag time, Kristi headed back home to Nanaimo with her about 4 pm. A great weekend. (Sunday night Jason had headed home as he wasn't feeling well with a bad headeache and a very sore neck from all his construction and digging he has been doing at home.)

A fabulous weekend. After she left, both of us collapsed for the afternoon. lol
