Last days of December 2020 and Happy New Year!

Sunday morning woke up to a text from Jason ... Kristi is in back in hospital at Victoria General as of 5:30 am this morning. Contractions again. Jason was right to take her to Victoria one day earlier. lol Now we wait to see what happens.

Cloudy and drizzly. The dogs did not care though when Ray took them for their morning walk. Both of us just puttered around for most of the day.

Monday morning, drizzling again. No news from Victoria. Kristi is still in hospital, nothing much happening there at this point. Could be like this for a week .... so we wait. :) 

They actually released her again ... until something more happens so they are back at the basement suite in Victoria until something else happens. lol Here they are on the beach with her ten minutes allowed to stand up. :)


I made a batch of split pea soup for the freezer and prepped dinner, Seafood Newburg, yummm. Something different besides poultry or ham.

Tonight there was a great shot of the full moon that Ray managed to get. We never did get much of the sun that was predicted today but at least it did not rain.



Keeping busy playing with the dogs.... this was Athena's turn.


Tuesday morning at least it's not raining yet .... This week is forecasted to be a really soggy one with tons of rain. 

By 9am the rain began so it was pretty much an inside day. I made a big batch of mac and cheese and divided it into 2 person portions for the freezer. Needed some quick lunches as we don't go out anymore and needed something easy to make when I don't feel like cooking. :) This was added to the split pea soup I made earlier in the week.

I made a batch of ice cream with Ray's Christmas present. That turned out fabulous. Just a lot of prep before you can actually churn the cream and eggs into ice cream. The bowl has to be frozen for 15 hours and the mixture has to be chilled for 8 hours. It was sure worth it though, for the results. An apple pie was also made with the neighbours apples we still have in the fridge, something for the ice cream to land on. Delicious.


Wednesday, rain, rain, rain.  How can you tell it's "walk" time in the pic below? Too funny. Normally Freya needs to be coaxed to go for a walk. These two run as soon as Ray mentions the word or they hear their collars. lol Of course Freya doesn't want to be left out so she makes sure she comes too.


Thursday, New Year's Eve. Very foggy this morning and then when it lightened up it stayed cloudy. The sprinkling began around 2 pm. I spent the morning prepping for our New Year's Lobster Dinner. Ray and I decided to dress up and have a fancy dinner at home since we are all stuck in our own homes with the lockdown. Kristi and Jason are still waiting in Victoria ...

I set the table with our good china and Ray helped prep the lobster. He took off his shirt to not spray lobster juice all over him. lol


This will be the last chance this year to enjoy our decorations as January 2nd we will be tearing everything apart and putting it away until next year.


Once that was all done it was time to get "dressed up" for our New Year's Eve pictures. Ray set up his tripod and voila!

First up for an appetizer:

Swimming Scallops Vongole Style. "Delicious, cream-free aromatic broth steams these sustainable, oceanwise scallops into sweet deliciousness."




Then lobster two ways:

Broiled lobster tails with butter, garlic and herbs and Lobster Tails Thermadore. All sounded yummy and was. :)

After dinner we cranked up the tunes and had a few dances until Ray's back protested. The dogs went crazy. :) Kristi's dog Zeus likes to dance with you. lol Not the best video ... I was laughing too much.


We had a lovely evening with each other, thinking of all our family and friends. 

January 1st - Breakfast New Years Day, Strawberry and cream cheese crepes.

It poured rain for the rest of the day with quite a bit of wind. Lake level is up 8" from yesterday. A day to putter around, me in the kitchen and Ray in his shop. Quite the process when Ray walks the dogs with drying the 3 of them off when he gets back. :) 

And so begins 2021. Happy New Year! Here's hoping that all of our lives get back to some normalcy. 


Friday, January 1st we just had a quiet day with all the rain again. Drying off three large dogs is quite the chore 4 times a day lol
